Cold carbohydrates, such as potatoes and pasta, can be healthier than freshly cooked dishes, according to Finnish nutritionist Marianna Hölttä. When carbohydrate sources like potatoes, pasta, and rice cool down, they transform into resistant starch. This process, Hölttä explained, provides a beneficial source of food for gut bacteria.

It was observed that pasta and potatoes consumed yesterday may appear older than freshly cooked dishes.
