When carbohydrate sources like potatoes, pasta, and rice cool down, they transform into resistant starch. This process, Hölttä explained, provides a beneficial source of food for gut bacteria.

It was observed that pasta and potatoes consumed yesterday may appear older than freshly cooked dishes.
