At the Chemistry and Biotechnology Institute of Tallinn University of Technology, senior lecturer Kristel Venel is developing a fermented carrot juice drink as part of efforts to address global food security. Speaking with Horisont editor Ulvar Käärt, Venel discussed the ongoing challenge of sustainably feed the world’s growing population while minimizing environmental impact.
